Cocoa butter is the pressed fat from the ground cocoa bean. It is obtained at temperatures between 70 ° C and 90 ° C. The finished cocoa butter is light golden yellow and clear in the liquid state. Then it is hardened and sold as a block or in chips. The cocoa butter is mildly aromatic with a slightly cooling taste. It is used for the production of chocolate, melted chocolate and couverture.
