A high-quality product (98% foie gras content) from Rougie. The pure foie gras farce (proportion 68%) was subtly seasoned. For the filling, small, fine pieces of foie gras (30%) were marinated overnight with port wine and spices (2%) and carefully folded into the foie gras mixture. The traditional trapezoidal shape, with many pieces, gives the block an attractive cut appearance.
