Coriander is the peppercorn-sized fruit of an umbelliferous plant native to the Mediterranean region. When dried, the fruits have a very aromatic scent and a very spicy flavor. Coriander contains a high amount of essential oil and is used as a spice in the home; for pickling, for preserving cucumbers, for rubbing pork before roasting, and for apple pies. Coriander is also used in the long-life baking industry for the production of pepper cakes, honey cakes, and gingerbread.
