Wild lavender honey, Mediterranean region, liquid, clear, not sweet, Feldt Beekeeping
Besides the well-known true lavender (Lavandula augustifolia), for example from Provence, there are other wild-growing species, such as French lavender (Lavandula stoechias). This blooms as early as spring in the Mediterranean maquis and garrigue, the low-lying, heathland areas of the Mediterranean region. These areas are naturally very bee-friendly because they are not used except for occasional sheep grazing. Wild lavender honey is a very clear honey (in its liquid state) and has a delicate aroma with a fruity note. It is not very sweet, but also lacks the strong, fragrant aroma of Provencal lavender. Wild lavender honey remains liquid for a relatively long time.
