Yuzu powder, extracted from Yuzu juice
The yuzu fruit is a Japanese citrus variety with significantly more complex aromas than the southern European citrus fruits familiar to us. Its exceptionally intense aroma, with notes of green mandarins and green grapefruits, delights ambitious chefs with a completely new citrus freshness. Yuzu powder is made from the juice of the yuzu fruit and therefore has hardly any bitterness and a mild acidity. 7.5 liters of juice are dried to produce 1 kg of powder. It can be used in sweet dishes for ganaches, mousses, and creams, and in savory dishes for flavoring marinades and sauces.
