The Beluga huso huso is the largest of all sturgeons and can reach up to 6 meters in length. It has become very rare in the Caspian waters. The color of its roe ranges from light gray to almost black. The light gray grain is the most sought-after. The Beluga produces the largest caviar, and with a weight of 300 kg, it can yield approximately 18 kg of caviar. It is characterized by a delicate, exquisite aroma.
