This air-dried ham is unique in Italy. His recipe is based on a centuries-old tradition in the Aosta Valley. There, the ham has always been ripened with mountain herbs. More than 30 years ago, producer La Valdotaine took up this tradition again and today produces exclusively ham from the flesh of Italian animals. This Saint Marcel ripens under a layer of herbs for at least 18 months. So far, the bulk of this specialty is sold locally. Their number is very limited.
