Black outside, white inside. Soak for 8 hours, cooking time between 1-2 hours. Cooking is soft but remains in shape. Spicy, sweet. Typical of Latin American cuisine, for example the Brazilian national dish Feijoada. Also attractive as a spiced bean puree.
