Black on the outside, white on the inside. Soak for 8 hours, cook for 1-2 hours. Cook until soft but retain their shape. Spicy, slightly sweet. Typical of Latin American cuisine, for example in the Brazilian national dish Feijoada. Also delicious as a seasoned refried bean.
