Summery light mixture for a lemon risotto. It has the intense taste of the dried lemon peel. For refinement, use the mildest possible Ligurian olive oil. This mixture can be combined very well with game fish or light poultry. For a stand-alone dish, you can add plenty of butter, Parmesan and egg yolks at the bottom.
