Small, hand-rolled durum wheat semolina noodles. They are a Ligurian speciality. Traditionally they are prepared with pesto Genovese, green beans and diced potatoes. But they are also very good as salad noodles, as an accompaniment to pan-fried dishes and to all kinds of pesto.
