Pappardelle are 10 mm wide. Their rough, broad surface allows them to absorb sauces well. They are ideal as a side dish with breadcrumbs to accompany roast beef in red wine, with cream and lemon sauce with asparagus and ragu (for example, in true Tuscan style with hare or duck), or as an addition to bean soup.
