The pappardelle are 10 mm wide. With their rough, broad surface, they can absorb sauces well. Ideal as a side dish with breadcrumbs to a roast beef in red wine, with cream and lemon sauce with asparagus and ragu, for example, all Tuscan from rabbit or duck meat, or as an insert in a bean soup.
