
Orecchiette, durum semolina pasta, Don Antonio
Orecchiette are an Apulian specialty and are prepared there with broccoli or cabbage, the Cime di Rapa and peperoncino. They are also the symbol of the city of Bari. The little cones are very present in the dish, so a vegetable or subtly meaty accompaniment such as a Bolognese sauce is more appropriate. It is not a side dish.
