
Tonno Alalunga, Tuna Alalunga (pink), Olasagasti
From June to November, the valuable long-tailed tuna is caught with natural bait and without the use of fishing nets. Its flesh is of an incredibly delicate pink, particularly lean, pleasantly mild and elegant in flavor. It should be eaten as a light salad, just with some Ligurian olive oil, a few capers and freshly ground pepper.
