The medium fruity, mild oil is a blend of the varieties Arbequina, Picual, Hojiblanca and Morisca. Pressed from the first olives, it smells of green leaves and olives. The taste, however, it is much riper, even a little buttery and has notes of ripe, sweet fruit and nuts. This oil is often used by patissiers for desserts. It also goes well with fish and white meat, vegetables and fruit salads.
