

Sakura Cherry Blossom Vinegar, Kobai, Japan
Sakura - the Japanese cherry blossom - is often used in traditional sweets. The blossoms and leaves of the Japanese cherry tree are preserved in salt, creating a slightly sweet aroma with a lovely fragrance. At the same time, however, you can also taste tart notes, an exciting flavor palette that is still very new to us in Germany. Here, the sakura blossoms were allowed to ripen in rice and plum vinegar, and the delicate acidity harmonizes with the bouquet. The Kobai factory in Shimane Province actually brews traditional shoyu and, with this product, has created a homage to the cherry blossoms in its hometown, which is one of the 100 most beautiful sakura spots in Japan. And it is precisely these that were used to create this fantastic product. For sushi rice, dressings, pickles, carpaccio/sashimi made with white-fleshed fish. For desserts, of course, but also for cocktails!
