A highly reduced juice made from water, truffle extracts, and salt. Produced during the first cooking of winter truffles before canning. For sauces, stocks, pates, and anywhere a natural flavor of black Perigord truffles is desired. An essential base product for gourmet cuisine. The `1st Choice` designation indicates that it can also be made from winter truffles harvested in November and December.
