Fish sauce is used extensively in Thai and Vietnamese cuisine. For the production, small, protein-rich fish are fermented together with salt for several months. The resulting liquid is then withdrawn and poured again. The fish are now ripening for several months in wooden barrels. Our tip for a dip: 1-2 red or green chili peppers, 1-2 tablespoons sugar, 2 tablespoons lime juice, 4 tablespoons fish sauce.
