
Hawthorn puree / pulp, finely strained
Hawthorn bushes are very common and grow up to a height of 1600m. Its red fruits were formerly used as mush or dried as a flour substitute. They are rich in calcium, potassium and phosphorus. From hawthorn berries or blossoms jelly, jam, wine or hawthorn brandy can be made. Wild sauces, chutneys or compotes can also be made more interesting in taste. The red berries taste slightly sour and are reminiscent of plums and cherries.
