It is made from sheep`s milk from the Latxa sheep breed. It is a slightly to medium spicy hard cheese. Idiazabal cheese comes from the Basque Country and Navarra. The name Idiazabal does not come from the town of Idiazabal in the province of Gipuzkoa as the place of origin, but rather from the geographical center of the area in which sheep cheese with the same properties is produced.
