Fenugreek is an ancient spice, although many people in Western countries find its taste rather unpleasant. Today it is mainly used in the Middle East and India for vegetarian dishes (e.g. Indian pickled vegetables). Smaller amounts of fenugreek should be included in good curry powder. The taste is bitter and aromatic. The smell of the leaves is somewhat reminiscent of lovage.
