Pure enjoyment is a must. In any case, it ennobles the cheese fondue and is also a good ingredient for cheese biscuits »Beaufort d`ete« is generally made from summer milk. Winter milk cheese is slightly more compact, drier and paler in texture. A wine recommendation for Beaufort are the Vins jaunes from the French Jura (grape variety Savagnin).
