The young, unripe jackfruit is wonderfully suitable for crunchy salads. The pieces of fruit have a consistency between the artichoke and the palm heart. Fried crispy in olive oil and seasoned with garlic and rosemary, it is a delicious addition to a fresh wild herb salad. Highly recommended!
