This historic variety was bred again in the old form by Ideariso. The farmers who grow for Ideariso are therefore commissioned by the Ministry of Agriculture to maintain breeding. The Gigante Vercelli is particularly resistant and is therefore not treated. It grows in preferred fields in the Vercelli region and is processed in a rice mill that only works in small batches. The result is a homogeneous quality, long-grained and creamy when cooked without becoming sticky.
