Green olives and anchovies - this is an extraordinary and interesting combination of flavors known as an aperitif but also popular as a bar snack. The taste is crisp and spicy. Green olives are picked unripe. They are treated with lye before being placed in brine. This process reduces the bitterness of the fruit that is not yet ripe and improves the consistency of the pulp. Due to the anchovies, the olives also taste like anchovies. Also ideal as a decoration for cold plates.
