Meticell is a gelling agent derived from plant cellulose. The powder is thickening in cold preparations. When heated, the preparations gelled, when cooled, they become viscous again. Meticell is very good for doughs for patties, vegetable dumplings and the like. Ť. to bind, but also to bread without flour and egg. Application: To prepare a Meticell base mix, carefully stir in 3 g of Meticell in 100 ml of water and cool down to 4 ° C in a refrigerator. The meticell base mix is stirred into the cold preparations (100 ml Meticell base mix to 800 g preparation). For breading, the cold dishes are spread with the Meticell base mix and then turned in the breading. Heat to 40-60  ° C to achieve the gelling effect.
