Thalassery, formerly Tellicherry, is located in the northwest of the state of Kerala, India, and is named after one of Indias most special and best pepper varieties. The Tellicherry pepper is made from fully ripe, red pepper berries, which are fermented with the whole pulp and dried. The pepper turns black, but not deep black, but has a rather pleasant deep brown color. Through this process, the aroma has developed even more clearly: the fully ripe peppercorns have assumed a decidedly nutty taste, but also a strong sharpness. The field of application of this pepper is primarily to be found in dark meat such as game and beef, but also in chocolate desserts.
