Chili Pequin is the cultivated form of Chili Tepin, which is regarded as the original form of chillies. The small Pequin pods have an extreme sharpness at a severity level of about 30-100 TSD Scoville Units. They are used in salsas, soup and stew dishes as well as bean dishes. Try a hollandaise with Pequin chili.
