Orangeate is made from the oily shells of bitter orange, also known as bitter oranges. The processing to orangeate is relatively complex: salted, half fruits are desalted, blanched, freed from the core and the shells then candied in sugar solution. Orangeat is bright to deep orange, slightly brownish. The taste is sweet, with an aromatic bitterness. Use as a baking ingredient for biscuits such as Florentine or in the Christmas bakery.
