For this olive specialty, pitted black olives are mashed with brown sugar from Mauritius. This gives them their special character. In a gentle process, the olives were previously deprived of moisture. The slightly nutty, salty and sweet wood taste is currently a highlight in the kitchen. A new texture that ennobles every dish. Dosage: as a favor. Applications: Perfect on mango ice cream, to Mediterranean salads, in dark sauces instead of raisins, as bar snacks and cheese plates. A must have to whiskey and cognac.
