For this beautiful cuvée, the young oil from the first 5 days of harvest from the olive varieties Arbequina, Hojiblanca, Picudo and Ocal is combined into a very special mixture. It tastes strikingly fresh with a slight hint of sweet green grass, nuts and apples, has slightly spicy notes. It is the special oil to refine the special dish. Valderrama in Montilla, north-east of Cordoba, covers an area of 273ha with 75,000 olive trees. Jose Valderrama devised a revolutionary process for extracting olive oil that led to the construction of completely new production facilities. From the harvest of the olives to the first flow of the fresh olive juice hardly 45 minutes pass, which ensures a maximum of aromas and taste.
