Very mild, slightly sweet taste with a touch of green wood and the typical aftertaste of oil. Very good for strong gazpachos, tomato salad, meat, meat dishes and strong fish. Jose M. Valderrama`s grandfather founded the first olive oil factory in 1920 on the grounds of the family`s finca in Montilla, 50km northeast of Cordoba. Today the property covers 273ha with 75,000 olive trees. Together with a mechanic, Jose Valderrama devised a revolutionary process for extracting olive oil, which led to the construction of completely new production facilities. From the harvest of the olives to the first flow of fresh olive juice hardly 45 minutes pass, which ensures a maximum of aromas and taste.
