Emphasizes fruity taste with hints of grass, apple and a little nut. Very good for dressing raw or fried vegetables, rice dishes and some raw fruits such as fresh pineapple etc. Jose M. Valderrama`s grandfather founded the first olive oil factory in 1920 on the grounds of the family`s finca in Montilla, 50km northeast of Cordoba. Today the property covers 273ha with 75,000 olive trees. Together with a mechanic, Jose Valderrama devised a revolutionary process for extracting olive oil, which led to the construction of completely new production facilities. It takes barely 45 minutes from the olive harvest to the first flow of fresh olive juice, which ensures maximum aromas and taste.
